Happy Easter
We have yet another snowy March day today for Easter. I thought Iris would be up early to hunt for her Easter basket, but she was still sleeping when we got out of bed around 7:30. The girls had fun with their baskets and new toys.
After playing for a while with their baskets I tried to convince B & Iris to let me make corn meal rye waffles but got a resounding NO! I settled for buttermilk waffles but snuck in 3 Tbs. of ground flax seed.
For dinner I made a ham, scalloped potatoes, corn, and crescent rolls. I forgot to start the rolls raising this morning so I tried to hurry up the process by raising them in the oven warmer and only giving them a second half hour rise. They were pretty tough and chewy so I’d like to try the recipe again when I have all day to do the proper raising. Still, they were all gobbled up and we had zero left by the end of the day. Tavie fell asleep during dinner. She’s never done that before….
Last week B and I decided we wanted to start an Easter tradition of going for a family bike ride. It’s been snowing so much we didn’t know if we’d be able to go, but the roads were clear so we all bundled up and went out for about an hour. Iris didn’t like the hills much, but other than that we had a blast. It was about 30 degrees, so not too bad. It was great to be outside and even better to have all of us together on our bikes. I plan on pulling the girls in the trailer quite a bit this summer, so I need to get my bike legs back.
