Spanakopita

Vegan with a VengeanceDinner tonight was Spanakopita from the cookbook Vegan with a Vengeance. I’m not sure why I have the cookbook since I’m not a vegan, but I thought I’d try the recipe after reading Isa Moskowitz sing the praises of Phyllo. To quote the book, “Don’t spaz out! It’s easy once you get the hang of it, and you’ll be making phyllo this and that all the time and soon your friends will have to plan some kind of intervention.” That sealed the deal, I wanted to try the recipe! I’ve always made spinach pie with a traditional crust and with cheese. I found it a bit tricky and cumbersome working with the dough, but after a little practice and a lot of olive oil I got the hang of it.Here are the spinach pies. Plus sweet potatoes for a side:spinach pie (350 x )I think it’s cool to challenge the status quo in cooking and eating. I don’t feel like I have to eat meat every day and I don’t feel like a meal is incomplete without it. I’m too old to be getting all out there and becoming a vegan (although I was a vegetarian for 10 years in my late teens, through my 20’s).
