Pineapple Waldorf Salad with Creamy Pineapple Sauce

I made this salad last summer and loved it. So I made it again. It is a great combination of flavors and textures. Not to mention healthy as all get out. Even the girls loved it.  I also managed to get some in B’s belly.  It is my mission in life to get that man to eat more vegetables.
Waldorf Salad

I got the recipe from Raw Foods For Busy People by Jordan Maerin. The recipe follows:

Creamy Pineapple Sauce:

  • 1/4 cup cashew or macadamia butter (I used raw cashew)
  • 1/4 cup pineapple juice (I used orange juice)
  • 1 Tb. lemon juice
  • 1/2 Tb. olive oil (I omitted this)
  • 2 tsp. dried dill
  • (I added some fresh pineapple as well, although not in recipe)

Pineapple Waldorf Salad:

  • 1 chopped apple
  • 1/2 cup pineapple chunks (I added more)
  • 3 stalks celery, sliced
  • 3-4 scallions
  • 1/2 cup walnuts
  • 1/4 cup parsley, shopped (I added a bit more)
  • (I served on butterhead lettuce)
