Pad Thai & Bikes

Pad ThaiOver the years I’ve tried many, many recipes for Pad Thai. It’s been a sort of cooking quest for me to find a really great recipe or to perfect my own version. A few years back I thought I had finally nailed Pad Thai. I probably make it once a month or so. It’s a meal I love & everyone in the house seems to enjoy it as well. I’ve tried very complicated recipes to easy, quick versions. Occasionally, I’ll order Pad Thai from restaurants to see how theirs measures up. Usually, it has way too many bean sprouts and way too much fish sauce and way too much grease. I decided to try a different version I found in a new cookbook, Vegan Express, by Nava Atlas. She has a simple recipe and also uses udon noodles instead of traditional rice noodles. Well, we had it last night and I thought it was excellent. Definitely not your traditional Pad Thai, but delicious nonetheless. I added some seitan to give it a little more protein.

Everyone enjoyed it. The twins especially love anything with noodles as they are great fun to fling around. But they did get some in their bellies. We’ve got leftovers to polish off which is always a bonus as well.

Now for the bikes. Of course all of our children will be trained to ride bikes or bike-like toys from the time they can toddle. Iris loves riding bike and does so almost every day when weather permits. We frequently go for bike rides together with the babies in their bike trailer in tow. I’m sure B has big plans for all of the kids to become great road bicyclists. But for now we got the twins some cute little “bikes” to begin their journey into biking greatness.
